купила чугунный вок, больше похожий на казан

Вот. Как казан ещё не пробовала, а stir fry в нем получается действительно хорошо, не сравнимо со сковородкой.

3-4 servings

1 tbsp chopped ginger
1 clove garlic
2 dried chilis

2/3 lb rock cod, cubed
3 small boiling potatoes
1 cup sliced bamboo shoots
3 cups chopped yu choy

1 tsp fermented black bean sauce
2 tbsp soy sauce
1 tbsp vinegar
1/2 tbsp cornstarch
2 tbsp water or broth
1 tbsp sugar

Mix the sauce.
Wash and microwave the potatoes for 5-6 mins in a covered dish.
Heat the wok till it smokes, then pour in some oil. Add spices to the oil. Then add the cod, spread it out, cover the wok and leave until half-cooked.
Stir the cod & move aside. Add the bamboo, fry for a minute. Add the yu choi & move the cod on top of it.
Quickly cut the potatoes to about same size as the cod cubes. Add them to the wok & mix.
In a couple minutes add the sauce, let it thicken & mix.

Spoon everything into a bowl & serve from there.
